What is Vitamin B-12?

Vitamins are organic compounds required in the human diet in small amounts. An organic compound is generally any chemical compound that contains carbon. In order for an organic compound to be considered a vitamin, a lack of the compound in the diet can result in symptoms of deficiency. The B vitamins are a group of water-soluble vitamins, primarily known for supporting the health of the nervous system.† However, each individual B vitamin has its own unique role and can also do other things.

Vitamin B-12 comes in many different forms but all versions contain the mineral cobalt, so compounds with B-12 activity are collectively called “cobalamins.” The two forms of vitamin B-12 used by the human body are methylcobalamin and 5-deoxyadenosylcobalamin. Cyanocobalamin is a form of vitamin B-12 commonly found in dietary supplements and fortified foods which needs to be converted in the body to either methylcobalamin or 5-deoxyadenosylcobalamin to be used. Unlike fat-soluble vitamins which can be stored in the liver and fatty tissues for future use, water-soluble vitamins are generally not stored in the body. Water-soluble vitamins circulate in the blood stream where they can be taken up by the tissues for immediate use or otherwise excreted. As such, it is important to consume adequate amounts of water-soluble vitamins, such as B-12, every day.

While vitamin B-12 is naturally found in animal products such as seafood, beef, chicken and eggs; it is not found in plant foods in any significant amounts.2 While fortified cereals may provide dietary vitamin B-12, fortified foods may vary in formulation so it is important to read product labels.
